Recipe of the month

~ Holiday Cookies~

2 cups sifted Unbleached Flour
2 cups sifted Spelt Flour
1 tsp Baking Powder
12 TBSP Smart Balance Spread
1 & 3/4 cup Turbinado Sugar
4 Large Egg Whites
2 tsp Pure Vanilla Extract
1 & 1/2 tsp Pure Almond Extract

ICING
2 & 1/2 cups confectioners sugar
2 TBSP Meringue Powder (found in cake decorating dept)
4 TBSP Water
1 & 1/2 Pure Almond Extract

You will also need wax paper and cookie cutters

1. In large bowl sift together flours and baking powder. Set aside.

2. In another bowl mix butter and sugar until fluffy. Add egg whites, vanilla and almond. Mix.

3. Add flour mixture to the butter mixture gradually. Mix only until combined.

4. Put dough onto plastic wrap and chill at least 30 minutes.

5. Cut a few sheets of wax paper 2 feet long. Place a handful of chilled dough on a sheet and roll out to 1/4 inch thickness. Place in the freezer and repeat with the rest of the dough on the other sheets of wax paper.

6. Heat oven to 375. Take a sheet from the freezer. Using cookie cutters make your shapes and carefully place onto an oiled cookie sheet. If dough is too soft to transfer shapes then freeze another 10-15 minutes while you continue to cut the other sheets.

7. Bake 8-10 minutes. Let cookies cool on a wire rack or a plate. When cool mix icing ingredients together until smooth. Color icing with desired food colorings and apply to cookies. For painting cookies you can add more water to icing.

Something to Think About:

Remember the Holiday Cheer

Don't get overwhelmed by the rushing, shopping, parties, working overtime and more. Take time out to make eye contact, hold the door for someone, appreciate the decorations. Expand your peripheral vision and allow yourself to see the beauty of the season all around you.
