                      of the month

                      ~ Butternut Squash 
                        Soup~ 
                         
                        1 Butternut Squash, peeled, 
                        seeded and cut into 1 inch chunks  
                        1 apple, peeled & cut into 1 inch 
                        chunks 
                        2 leeks, sliced, white part only 
                        4 cloves of Garlic, minced 
                        2 cans of Chicken or Vegetable Broth 
                        2 TBPS Smart Balance Buttery Spread 
                        1/2 Cup Soy Milk 
                        1 tsp Curry Powder 
                        1 tsp Trader Joes 21 seasoning Salute 
                        Salt & Pepper to taste

                     1. 
                      Place Butternut Squash chunks in a pot and cover with water. 
                      Cover with lid. Bring to a boil for 15-20 minutes or until 
                      soft when pierced with a fork. 
                    2. 
                      In a frying pan over medium heat cook apple chunks, leeks 
                      and garlic with 4 tablespoons water. Cook 5-10 minutes adding 
                      more water if necessary.  
                    3. 
                      When both are finished place leek 
                      mixture in a blender. Add squash and enough broth to blend. 
                      You may need to blend this in 2 parts if your blender is 
                      not big enough.  
                    4. 
                      Pour 
                      blended mixture in a pot and heat on medium heat. Add the 
                      rest of the Broth, Smart Balance, Seasonings, Soy Milk. 
                    5. 
                      Bring to a light boil and voila - your soup is done. Garnish 
                      with squash seeds. You can toast them in the over with some 
                      salt and pepper for an extra tasty crunch.

              How to do this exercise:  
              (Always be sure to 
                check with your Dr before performing this or any other new exercise 
                especially if you have heart problems, high or low blood pressure, 
                neck problems or are pregnant) 
              1. 
                Stand with feet 3-5 feet apart, left toes pointing to the left 
                and right toes pointing forward. 
              2. 
                Bend the left knee over your ankle. 
                Open your hips by gently opening the left knee in line with the 
                left toes. 
              3. 
                Reach the arms out to the sides, space between the shoulders and 
                ears. Engage your abdominals, spine long. 
              4. 
                Inhale and bend your left elbow to the left thigh, reach through 
                the right fingertips. 
              5. 
                Exhale, engage your abdominals to lift you up and over to the 
                right as you reach through the left fingertips. 
              6. 
                Repeat 2-3x then switch sides.

 Nutrition 
                    March is 
                      National Nutrition Month. Use this month to revamp your 
                      diet. Make sure to get 7-13 servings of fruits & veggies 
                      daily. I cup of raw or 1/2 cup cooked equals one serving. 
                      Reduce or eliminate processed foods, artificial ingredients 
                      and refineds sugars from your diet. And of course make sure 
                      that you are getting at least 10 glasses of water daily.
