Recipe of the month

~ Mothers Day Mini Frittatas~

8 Egg Whites
1/4 cup Mushrooms
1/2 cup Cherry Tomatoes
2 Green Onions
3 /4 cup chopped zucchini
1/4 cup chopped Asparagus
1/4 cup Feta Cheese

2 TBSP chopped Basil
1 TBSP Parmesan Cheese
Oil Spray for Pan

 

1. Preheat oven to 350.

2. Spray a saute pan with oil. Add zucchini, asparagus & tomatoes - cook 3 minutes. Add mushrooms and green onions - cook 1 minute.

3. Mix egg whites, feta & basil. Spray muffin pans with oil, or use paper muffin cups.

4. Spoon cups with veggies, add egg whites,sprinkle with parmesan.

5. Bake for 15 - 20 minutes.

Exercise of the month:

Breast Stroke

Benefits:

  • Strengthens the lower back, spinal extensors, shoulder stabilizers, & gluteals.

How to do this exercise:

(Always be sure to check with your Dr before performing this or any other new exercise especially if you have heart problems, high or low blood pressure, neck problems or are pregnant)

1. Lie on the floor, arms on the mat to the sides with elbows at 90 degree angle. Zip through your abs, space between shoulders and ears, scapulae in that neutral position, legs straight.

2. Inhale and reach the arms forward while keeping space between your shoulders and ears.

3. Exhale and circle the arms around to the sides of your thighs while you raise your chest and legs. Keep zipped, spine long and keep the eyes looking down to the mat so that the neck is long and not hyperextended.

4. Repeat 8-16x
