                          Glazed Cornish Hens with 
                         Wild Rice Stuffing 
                         
                          4 cornish Hens - defrosted, 
                            cleaned and giblets removed. 
                          Apricot Preserves 
                           2 cups cooked Wild 
                            Rice  
                          1/2 Onion, diced 
                          2 Garlic Cloves, chopped 
                          1 cup of sliced Mushrooms 
                          1 tbsp Olive Oil 
                          1 stalk Celery, chopped 
                          Salt & Pepper to 
                            taste  
                          | 
                        
                       | 
                       
                                         
                    
                  1. Put oil in a saute 
                    pan. Add onion - cook 3 minutes stirring occasionally. Add 
                    small amounts of water if necessary      to 
                    avoid dryness in the pan.  
                   
                  2. Add celery and 
                    cook 2 minutes. Add Mushrooms and Garlic and cook 2 minutes. 
                    
                  3. Add this mixture 
                    to cooked Wild Rice. Add Salt and Pepper to taste. 
                    
                  4. Stuff loosely into 
                    cornish hens and place hens in a baking dish. 
                    
                  5. Spread Apricot 
                    Preserves liberally onto the hens. Sprinkle with salt and 
                    pepper. 
                    
                  6. Cover 
                    pan loosely with aluminum foil and bake in a pre-heated 350 
                    degree oven for 1 hour or until a meat      thermometer 
                    reads 180.  
                    
                  7. Take hens out of 
                    the oven. Let hens sit at room temp for 10 minutes to allow 
                    the juices to sink back into the      meat. 
                    
                  ENJOY with steamed broccolini and roasted butternut squash 
                    as shown above.         
                    
                    
                                      
                    
                  How to do this exercise:  
                    
                  (Always be sure to check with your Dr before performing this 
                    or any other new exercise especially if you have heart problems, 
                    high or low blood pressure, back or neck problems or are pregnant) 
                  
                    -  
                      
Begin lying on your stomach with your legs long and lengthened. 
                        Place hands under your shoulders, engage your abdominals 
                        and as you inhale press your hands into the floor and 
                        lift your chest off the floor as you lengthen your spine 
                        all the way through the top of your head. 
                     
                    -  
                      
Keep 
                        your chest open, abdominals lifted and elbows bent in 
                        at your side. 
                     
                    -     Exhale, bend 
                      your knees and rest in child pose.
