Recipe of the month

Chicken Parmesean

1lb chicken breasts

2 egg whites, beaten

3/4 cup Bread Crumbs

1/2 cup Flour (I use spelt flour)

Heidi's marinara sauce (or your favorite healthy store brand)

Low Fat Parmesean Cheese

Low Fat Mozzerella or Provelone

Basil for garnish

Salt & Pepper to taste

1. Rinse and dry chicken breasts.


2. Place beaten egg whites in a pie plate or on a regular plate.

 

3. Put bread crumbs in another pie plate or plate. Put flour in another pie plate or plate.

 

4. Dip chicken one at a time in flour (shaking off excess), then egg whites then bread crumbs making sure to coat evenly.

 

5. Spray a cookie sheet with oil lightly. Place coated chicken on cookie sheet.

 

6. Bake in a pre-heated 350 degree oven for 25 - 30 minutes or until a meat thermometer reaches 180 degrees.

 

7. Pull pan out of oven, spoon marinara sauce over chicken. Sprinkle chicken lightly with cheese then place back in the oven to cook until cheese is melted. When melted spoon more heated marinara sauce over chicken and serve.

Exercise of the month

Lotus

 

Benefits:

  • Opens the hips and ankles.

  • Strengthens concentration.

How to do this exercise:

(Always be sure to check with your Dr before performing this or any other new exercise especially if you have heart problems, high or low blood pressure, back or neck problems or are pregnant)

  1. Begin seated. Place right ankle on left thigh. If this is challenging enough for you stay here in half lotus, close your eyes and breath into any areas of tightness. Make sure to repeat on opposite side.

  2. If you are ready to go into full lotus you may place your left ankle on the right thigh. Continue to lengthen through your spine and breath full, calm breaths.

  3. Gently come out of the pose by lifting one leg off at a time while breathing calm.

  4. Repeat with the left ankle on right thigh first then place right ankle on left thigh.

  5.    There are many forms of lotus for all levels - research whatever might be best for you.
