Recipe of the month

Squash Burritos

2 cups mashed Butternut or Banana Squash

8 Tortillas

1/2 cup sliced black olives

1 small can of tomato paste

Low Fat Monterey Jack or Chedder Cheese

1-2 tsp Chili Powder

1 tsp Garlic Powder

Salt & Pepper to taste

1. Prepare Squash - peel, cut into 1 inch chunks and boil in water over med high heat until soft. Drain and mash.


3. Mix chili powder, garlic powder and salt and pepper with squash. Add more seasonings if desired.


4. Place tortilla on a plate. Spoon some of the squash mixture in a line down the center of tortilla.


5. Fold tortilla and flip over so open edge is on the bottom.


6. Spread tomato paste over the top, sprinkle with cheese and sliced olives.


7. Place in microwave for 1 minute or until cheese melts - or assemble all tortillas, place in a baking pan and bake at 350 degrees until cheese is melted.



Exercise of the month

Pilates Obliques Roll




  • Strengthens the abdominals and hips.

How to do this exercise:

(Always be sure to check with your Dr before performing this or any other new exercise especially if you have heart problems, high or low blood pressure, back or neck problems or are pregnant)

  1. Begin seated, feet hips width apart keeping heels down to the floor.

  2. Round your spine as you continue to lift through your abdominals, scapulae neutral, chest open and arms lengthened out in front of you.

  3. Inhale as you roll back at the same time let your eyes follow your right hand as it opens in a semicircle.

  4. Exhale as you roll forward bringing the hand and the focus forward again. Keep spine rounded the whole time.

  5.   Repeat with left arm. Keep good form as in #2 above throughout the whole exercise.
