Recipe of the month

 

Mixed Berry Scones

1 cup Regular Flour

2 cups of Spelt Flour

5 Tbsp Turbinado Sugar

1 Tbsp + 1 tsp Baking Powder

1/2 tsp Salt

1/2 cup Almond Milk (regular milk or soy milk can be used instead)

4 Tbsp Smart Balance Buttery Spread

1 banana mashed

1 and 1/2 cup frozen mixed berries

 

Glaze: 1/2 cup powdered sugar

           1 tsp milk


1. Preheat oven to 425.

 

2. Mix dry ingredients in a large bowl.

 

3. Add smart balance to dry ingredients and "cut in" or mix with a fork until crumbly.

 

4. Add mashed banana and milk to dry ingredients and continue cutting in with a fork only until dry ingredients

come together. Do not overmix or your scones will become tough. Fold in mixed berries.

 

5. Turn out mixture onto a lightly floured surface.


6. Form into a ball with your hands. If dough is too sticky add some flour. Then flatten into a 1 inch thick disk.

 

7. Cut into triangles or whatever shapes you would like of similar size. Place on a cookie sheet and bake 18 minutes. Scones are done when the puff slightly and turn golden brown.

 

8. Allow to cool. Make a glaze by mixing powdered sugar and milk. Spoon glaze over scones.

Exercise of the month

Superman

Benefits:

How to do this exercise:

(Always be sure to check with your Dr before performing this or any other new exercise especially if you have heart problems, high or low blood pressure, back or neck problems or are pregnant)

  1. Place hands slightly more than shoulders width apart in line with your shoulders. (Photo above shows an advanced push up on a stability ball)

  2. Draw an imaginary line between your middle fingers. Your eyes should be directly above this line the entire duration of the exercise.

  3. Zip your abs. Think of lengthening your body out through the top of your head and out through your heels.

  4. Keep your body long and straight as a plank. Inhale as you bend your elbows and exhale as you straighten them .

  5.   The only body parts that bend are the elbows, everything else is stable. The most important thing is stability. It doesn't matter if you only lower 1/2 inch - as long as everything else is stable.
